Smoky Tiba Tempeh Noodle Stir Fry

If you’re after a quick dinner that’s big on flavour, this Smoky Tempeh Noodle Stir Fry is for you. Crispy Tiba Smoky Tempeh, colourful vegetables and a rich soy and ginger sauce come together in under 30 minutes for an easy meal you’ll want to make again and again.

Ingredients

You’ll need:

  • 000g Tiba Tempeh Smoky Block, torn into bite sized pieces
  •  200g noodles
  • 1 small broccoli, cut into florets
  • 2 carrots, thinly sliced
  • 1 red pepper, sliced

For the sauce:

  • 3 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp tomato ketchup
  • 2 garlic cloves, grated
  • 15g fresh ginger, grated
  • 1 tsp cornflour
  • 3 tbsp water

Method

  1. Cook the noodles according to the packet instructions, then drain and set aside.
  2. Mix all the sauce ingredients together in a small bowl until smooth.
  3. Heat a large frying pan or wok over a medium high heat. Add the torn smoky tempeh and cook for 5 to 6 minutes until the edges start to crisp up.
  4. Add the broccoli and stir fry for 3 minutes. Add the sliced carrots and red pepper, then cook for a further 3 to 4 minutes until the vegetables are just tender.
  5. Pour in the sauce and stir well. Cook for 1 to 2 minutes until glossy and thickened.
  6. Add the cooked noodles and toss everything together until evenly coated. Serve straight away.
